Urban Bees

The urban forest as a second nature.

With our honey being produced here in the city you can be assured of pesticide free nectar sources, and 100% pure unadulterated honey that has not been treated or pasteurized. All the enzymes and phenolic compounds that contribute to human health are left intact.  Floral resources may change from week to week or even day to day depending on weather, temperature and what forage is available through the season. It can be white or light (early season) to golden or dark honey (typically late season). The bees decide all this, we just follow with what nature offers.

Ontario No. 1 Honey

Unpasteurized

Browse our store to explore different varieties based on colour scale. In Canada categories include white, golden, amber, or dark. Darker honeys tend to be more robust, and have more complexities in flavour profile. All our honey is ripened in the hive and has a moisture content below 18% before bottling. Please note, honey is a supersaturated solution of natural plant sugars. It may crystalize over time. If you prefer the texture then enjoy as is, or place the jar in a pot of warmed water to dissolve and re-liquify. We suggest not using a microwave to dissolve.

Creamed Honey

Smooth on the palate from a controlled crystallization

Fully local, the same quality as our liquid honey, but taken a step further and mixed with a seed honey that has a fine crystalline structure then allowed to rest to produce a smooth set. No cream or dairy is involved in this "creaming" process, which alludes to the texture. Honey Comb and Comb Sections

100% Bee made

Whether cut comb that has been cut and portioned from full frames, or comb sections that the bees have drawn out in 4 inch squares this is as natural as it gets. Honey that has never been touched by human hands. Before the advent of extractors this was how honey was typically consumed, and since it comes in its own smart wax packaging the whole is consumable. Excellent as an accompaniment to cheese or charcuterie platters.

More Than Honey

Hive products are not limited to honey alone. Beeswax capping's are a natural byproduct at extraction time. The cappings are sliced away to open the cells to release their sweet reward. Once the cappings have been rendered and strained they yield a premium quality wax for candles that burn longer (beeswax has a higher melting point), burn clean (no soot), and emit negative ions that act to purify and improve air quality. The best cappings are also used in lip balms or even to cook with. Such a versatile natural product.

The Heart of the Hive,

She sets the tone and the temperament of the hive and can be distinguished by her larger abdomen, and a darker hairless thorax.

Bees and Brood

Brood and honey stores can all be distinguished by the colour and shape of their cappings. Honey has a white semi transparent wax capping, where as brood has a brown or tan capping the is air permeable to allow the pupae to breath as they change in their cell from larva to adult.
