Liquid Honey

For two years now our Dark Honey has placed first at the Royal Agriculture Winter Fair. Though dark in colour it is not a heavy or overpowering taste, but thick at 15-16% moisture content (honey must be below 18% moisture to be graded Ontario No. 1). Our Golden Honey, also at 16% water content, has wonderful floral undertones, with hints of citrus, herb, and roses.  Whatever the bees are foraging on determines the colour of the ripened honey, but a general rule is light honey from the early season and dark honey from late summer and autumn. The bees make it, we just extract and package it. Beekeeping is a bit of "que sera,  sera" .
